  • One of the great misconceptions of the fry-everything world is the chili cheeseburger. It’s not the burger topped with chili con carne presented at many restaurants. It’s a burger mixed with chili ingredients.

  • One of the great misconceptions of the fry-everything world is the chili cheeseburger. It’s not the burger topped with chili con carne presented at many restaurants. It’s a burger mixed with chili ingredients.
    Chili Cheeseburger
     1 tablespoon olive oil
     2 medium onions, finely chopped
     2-3 garlic cloves, diced
     1 (8-ounce)can tomatoes in juice
     1(3.5-ounce) can green chilies
     1 tablespoon chili sauce
     1⁄2 teaspoon cumin (seeds or powder)
     1 pound 80 percent ground beef
     2 tablespoons corn oil
     4 slices Monterey Jack or gruyere cheese
     Shredded lettuce
     4 Kaiser buns, split, warmed
     Onion slices
    Saute onion and garlic lightly in olive oil. Add drained, chopped chilies, then tomatoes, chili sauce and cumin. Stir and cover to simmer 10 minutes. Mix all with meat. Divide into four balls and shape into round burgers. Heat corn oil and add burgers, grill 5 to 6 minutes on each side. Top each with a slice of cheese on a toasted Kaiser bun. Add lettuce. Serves 4.
