  • My family anticipated ice cream pie on Valentine’s Day. It was direct from the heart of my mom, even if it took only a few minutes to make and no baking.
    She’d buy the shell “because I can’t make any better.” In those years, fresh strawberries usually were not available, so she’d press Hershey’s chocolate Kisses into the top, in the shape of a heart.
    Even though the oohs and ahs pleased her, she refused to make it on any other day, reserving her ice cream pie as a show of love on the special day. Our beagle got her treat too, a lick of the ice-cream container.
    Ice Cream Pie
    1 cup water
    1 3-ounce package strawberry flavored gelatin
    1 pint (2 cups) vanilla ice cream
    1 prepared graham-cracker pie crust, flan or regular
    Milk chocolate kisses or fresh strawberries optional
    Stir water into  gelatin and cook uncovered, 1 1/2 to 2 minutes. Add ice cream to hot gelatin, stirring until melted. Chill mixture for 35 to 30 minutes, stirring twice.
    Pour chilled ice cream mixture into pie crust. Chill about four hours or until ice cream is set.
    Arrange fresh strawberry slices or chocolate kisses on top of pie.
    Serves 8
